The quest for freshness and balance




The style of the future wine is determined by the quality of the grapes. 
The goal is to harvest the grapes with the optimum phenolic maturity and high acidity and to avoid over-maturation. By using correctly balanced grapes, it allows us to produce wines with freshness and finesse we want.

Mediterranean climate is hot and sometimes very dry in summer. We need to try to moderate those effects to achieve balanced wines.
The quality of the soil, altitude, microclimate and cultural practices can:
- Reduce water stress during drought (soil type, ways of working, sea influence, ...)
- Take advantage of cool temperatures and a large temperature range between hot days and cool nights (altitude, proximity of mountains, ...)

All wines are produced on OINOS areas of terroirs suitable adapted for this qualitative research.
Our production methods are defined to complete the effects of nature.
